Salmon Soba Noodles (3 Ingredients)

Super simple meal idea full of goodness ? Pink Salmon with soba noodles & squeeze of lemon ? ???Introducing fish to your baby is simple, you can bake it, mix it in a dish, pan fry it or steam a boneless fillet. Cold-water fish including salmon, herring, canned salmon, canned tuna light or sardines are a great source of DHA in a babies diet. DHA plays a crucial role in retinal and brain development and is especially important for children in the first two years of life (ref:Environmental Defense Fund,one of the world’s largest professional environmental research organisation) *canned salmon (mostly sockeye or pink from Alaska), which is low in contaminants and high in heart-healthy omega-3s. It’s also sustainably caught in Alaska, making it a great choice all around. Salmon is a great source of iron, protein, full of omega-3 and vitamin B12 ? B12 helps make red blood cells and is great for building the central nerve system function of the body (ref: Linus Pauling Institute of research). Salmon is chock-full of Omega-3 essential fatty acids, which boost brainpower. These Japanese organic Soba noodles are in most supermarkets, they take 2min to boil, they are nice & soft to offer bubs 6mo+ and are Super healthy. They are made of organic buckwheat flour, organic wheat flour and water. *Note: note: fish and wheat is a allergen for ‘some’ babies, please chat with your doctor if have any concerns or family history.

Ingredients
  • 2 fillets of boneless Wild Fresh Salmon (OR use a 200g can of boneless pink wild salmon, wild Alaskan
  • 2 serves of Organic Soba Noodles
  • 125g of baby corn
  • 1 Lemon
  • Additional: make a quick pesto sauce to this recipe OR full fat greek yogurt as a sauce.
Directions
  • Step 1 Place the salmon fillets in the oven on 200dc for approx 20 minutes until cooked through. On a stove top boil the baby corn in water until cooked (approx 5 min). Separately, on a stove top boil the soba noodles for 2 minutes until cooked (they are super quick to cook!), then drain under warm water until the water runs clear. Pour the cooked soba noodles and cooked corn into large bowl, break up the salmon into big chunks and mix everything through. Grab your lemon, cut it in half and squeeze it all over the noodle dish. Feel free to make a quick pesto OR use full fat greek yogurt as additional sauce.
  • Step 2 Ready to serve to your the family and your baby led weaner. 6-8 months old: place a small amount of soba noodles, a baby corn and chunk of salmon onto babies highchair tray, let them pick it up with their hands. 8 months old + you could serve the noodles pre-loaded on a small fork (tip: stainless steel cake forks are great for this), with the baby corn whole or cut up into pieces and small chunks of salmon so baby can practice her pincer grip.
