Ginger & Date Soft Biscuits

These super healthy 'Ginger and Date Biscuits' are so yummy, with no sugar, healthy and sweetened by natural sugars. Delicious for the whole family! A nice introduction to ginger for baby.

Ingredients
  • 150 grams self-raising flour (or all purpose flour)
  • 1x tbsps of ginger ground
  • 1x tbsp of cinnamon
  • 2x tbsps of unsalted non-dairy butter
  • 1 tsp of vanilla extract
  • 80 grams of seedless dates
  • 6 tbsps non-dairy milk
  • 50 grams banana (approx 1 small banana)
Directions
  • Step 1 Set oven to 170 degrees. Line a large tray with baking paper or silicone reusable mat.
  • Step 2 Soak and cover all seedless dates in boiling water in a bowl for approx 5 minutes, until they are really soft, once soft pour out water and then mash all dates up to form a date paste.
  • Step 3 In a large mixing bowl mash banana, then add date paste and all other wet ingredients and mix. Then add flour and fold through until you have 1 cookie dough ball formed (picture below).
  • Step 4 Now roll out approx 10-15 balls (depending the size of the biscuit you want) and place balls evenly on the lined baking tray. Dip a fork into a cup of water, each time and use the fork to flatten each ball to make a biscuit shape. Once all flattened to about 1.5cm, place biscuits into the oven for approx 15 to 20 minutes until cooked. Leave to cool, then either freeze the biscuits for later or place into a jar.

  • I’ve just made the ginger and date biscuits this morning,they’re so ?,great recipe.?

  • I just wanted to pop on ans say thank you for the ginger and date biscuit recipe. Both my children have multiple food intolerances so finding food they can both eat is difficult. I decided to make these omitting the banana as it disagree with them both (they both love bananas too ?) and trial out peanut butter instead. It worked and neither has had a reaction so far which is incredible. Thanks so much, we made some on Friday but we ate them all so had to make another batch today. I’ll try freezing some but I doubt they will make it that far ? Thank you. Your recipes are fabulous. So tasty ???
