Ava’s 1st Birthday Cake - Healthy and natural

: The cake tin that was used was the Wilton Easy Layers cake pan set from Amazon link can be found here www.amazon.com/shop/babyledweaningideas , this is a five 6 inch pans. If you do this elegant style 1st birthday cake you will need to just bake 1 batch of the cake ingredients below. The flowers on the cake were from Target (Australia, but i am sure you can find them on Amazon or your local supermarket) they were just cornstarch and water!

Ava’s 1st Birthday Cake - naturally sweetened!

Ingredients
  • • 4 large Bananas
  • • 10 Medjool dates remove seeds
  • • 6 Eggs
  • • 1/4 cup Coconut oil melted
  • • 1 cup Coconut flour
  • • 1 tbsp Mixed spices or just cinnamon
  • • 1.5 teaspoons Baking powder
  • • 1/2 cup Blueberries
  • Icing
  • • 2 cans Coconut milk (not coconut water) ensure you buy the FULL FAT milk (leave in the fridge over night before making the icing) * another option is to use full fat cream cheese instead of coconut milk (blend with the vanilla essence until light and fluffy)
  • • 2 tbsp 100% Pure Vanilla Essence
  • Decoration
  • • 3/4 cup Blueberries
Directions
  • Step 1 • Preheat oven 170 degrees and grease pan. Blend seedless dates in the blender, then add bananas and quickly blend (don’t over mix). Pour blended ingredients into a bowl, then add/combine coconut flour, eggs, coconut oil, mixed spices and baking powder. Once combined leave mixed ingredients to sit for 10 minutes waiting for the coconut flour to expand. 

  • Step 2 • Stir through blueberries, the pour combined ingredients into your greased cake tins and place into the oven for 45min or until cooked in centre (test with a wooden skewer) 

  • Step 3 •
 Make the icing: spoon out the ‘top of’ the coconut milk cans (not the liquid only the condensed milk that has been set), place into a bowl, add vanilla essence and whisk until icing is nice, fluffy and forms peaks. Now place into the fridge to keep cold
  • Step 4 • Back to the cake, once cooked. Remove from tray and leave to cool on a rack. 

  • Step 5 • Time to ice the cake: use a cake knife or spatula to ice the layers of the cake so they stick together than smooth out and ice the whole cake. Feel free to decorate with flowers or additional blueberries. 

  • Step 6 • Enjoy and have an amazing 1st Birthday Party!

Whisking icing

If you would like to bake a 2-tier NUMBER 1 cake (picture below) that serves a party of 30+ you must DOUBLE the cake ingredients and repeat the same cake making process again for the second layer. Note: 1x layer cake takes 45minutes to cook thus double that if you are making a 2x layered cake. The tin used to make the cake below was Wilton Cake Pan 13 inch x 9 inch Silver.

  • This recipe is amazing! Made this cake for my sons 1st birthday and it was a hit. We doubled the recipe as we had a two tier cake. Was so great that my son could eat some of his cake as I wouldn’t have allowed him to eat ordinary sugar laden cake. ?

  • Love this recipe! I’ve found this whole website super helpful when it comes to meal and snack ideas, and I was very grateful to find a cake recipe that wasn’t full of sugar that my son would still enjoy. I made the cake into a football (my son was born on Superbowl Sunday, I think he’s going to have a football themed party every year hahaha) and used a bit of cocoa powder and food colouring for the icing and it turned out great. He actually wasn’t a fan of the icing, but once I scraped off what was left after the cake smash, he loved the cake!

  • My son’s birthday is coming up in a few weeks (where did time go?). As we love your recipes, I’ve decided to make this cake. I just have two questions. Should the bananas be overripe or just ripe? I can no longer find fresh blueberries (which is a shame as they’re my son’s favorite). Do you think frozen would work in the cake? I’d use another fruit for decoration.

    • The more over ripe the bananas the sweeter the cake will be so I suggest you keep them til they are over ripe ? frozen blueberries should work the same ? have an amazing day!   • Can this recipe be used to make cupcakes? Also, would butter work as an alternative to coconut oil?

  • Has anyone made this cake without eggs? My little one is allergic to egg. What was the best substitute? 6 eggs seems to be so many to substitute with just applesauce. I’m considering doing a combination of applesauce and another substitute. Thoughts?
